A Toast to Pizza!

Here's a mini-post of a fun dinner we had. My friend remembered making these from his youth and thought it would be cool to try and make them now. It's Toaster Oven English Muffin Pizzas! We were going to think of a clever name for these, but "Minty Pizza" sounds a little misleading? How about something cooler like "Little Dragon Pizzas."

Let the cooking show begin! Here's the ingredients. Notice we used the friend-recommended Turkey Pepperoni. I gotta say we look forward to trying out different sauce/cheese/toppings combos but we thought we start with a basic type of pizza.

The first thing we did was pre-toast the pepperoni on crinkled aluminum foil, and then press them in paper towels. This removes a ton of the grease you'll be glad you didn't eat. But honestly these Turkey Pepperonis had a lot less grease than the regular kind.


Next step is to cut the English Muffins in half and toast those, too. This will help make them nice and crispy.


Spoon on some tomato sauce, add some cheese, the pepperonis, and a little more cheese on top to make it look extra cheesy.


Toast the whole thing again! Don't worry the already-toasted muffins and pepperonis won't be burnt, they've cooled down a bit already and this just toasts them back up.


Here they are all done! Nice and crispy and tasty! Have fun making your own Lil' Dragon Pizzas!
